Exquisite matcha macarons with chocolate ganache
Ingredients:
- 110g of almond flour
- 220g of powdered sugar
- 110g of egg whites
- 30g of sugar
- 8g of matcha green tea powder
- Dark chocolate ganache for the filling
Preparation:
Sift the almond flour well with the powdered sugar.
Whip the egg whites to stiff peaks and add the sugar and the matcha green tea. Keep in mind that the color fades when baking.
Gradually and carefully fold in the flour and sugar mixture, taking care not to deflate the egg whites too much.
With the help of a piping bag, pipe the macarons onto a special mold or make sure they are all the same size. Tap the baking tray a few times to release the air bubbles.
Let them rest until the top layer is dry and smooth (between one and two hours).
Preheat the oven to 150º and bake for about 12 minutes.
While the macarons are baking, take the chance to make the ganache.
Do not remove the macarons from the tray until they have cooled completely.
Fill each macaron with the ganache and place a top on it, pressing lightly
