What color is it?
\nWhen buying matcha, look for a super vibrant green. A bright green shade means it was carefully shade-grown to reach its maximum chlorophyll content and harvested from the highest, smallest and youngest leaves of the tea plant. If the matcha has a browner or yellower tone, it is probably made from leaves that were not properly shaded or that come from the lowest, largest and oldest leaves of the tea plant. The greener the matcha, the more health benefits you get from the chlorophyll and amino acids.<\/p>\n

Where does it come from?
\nJapan and China are the main sources of matcha. Although matcha originated in China, it became an integral part of Japanese culture over the last 800 years and has been consistently cultivated in Japan ever since. Matcha cultivation almost stopped in China until the last 15 years or so. Unlike Japanese growers, Chinese farmers generally do not shade-grow their tea plants or air-dry them after steaming. This makes Chinese powder duller in color and lacking in flavor. For matcha purists, \"Chinese matcha\" is not really matcha at all, just green tea powder. How much does it cost?
\nThe best matcha demands a complex process of cultivation and milling. Only the best and youngest leaves are ground in granite mills. This delicate and time-consuming process means that quality matcha is expensive to produce. If you see a low price, most likely the tea was not grown or processed under optimal conditions.<\/p>\n
What does it taste like?
\nVery high-quality matcha, like our Ceremonial Grade, tends to have an earthy flavor with a touch of natural sweetness that comes from the L-theanine in the leaves. Lower-quality matcha lacks L-theanine or has lower levels of it and tends to taste bitter.
